Baked Oatmeal Casserole

Recipe inspired by alwaysamrsforeverakidd
tweaked a bit
2 cups old fashion oats
1/3 cup light brown sugar
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 cup walnut pieces
1 cup whole strawberries cut up
1/2 hersheys semi sweet chocolate chips
2 cups Silk unsweetened vanilla almond milk
1 large egg
3 tbsp light blue bonnet butter
1 tbsp vanilla extract
1 ripe banana sliced
Directions:
*Preheat oven to 375 degrees
*Spray the inside of 9×13 baking dish with cooking spray
*In a large bowl mix togteher oats, sugar, baking powder, cinnamon, salt, half the walnuts, half the strawberries and half the chocolate
*In another bowl whisk together milk, egg, butter and vanilla extract
*Add the oat mixture to sprayed baking dish
*Arrange remaining strawberries, walnuts and chocolate on the top
*Add sliced bananas to the top and pour the milk mixture over everything
*Gently shake the baking dish to help the milk through the dish
Bake 40 minutes or until top is golden brown and milk has set

To jazz it up a bit more it was topped with about 1/8 c of non fat vanilla greek yogurt, some shredded coconut and cinnamon
